Gluten-Free Biscuits – made with butter, raw cane sugars, and local linseed meal. In the past, bakers would have sourced many ingredients from their local area. We use linseed meal grown and processed by Durwin Banks & his family at Barns Green in West Sussex. It was this fine product, with its delicious nutty flavour, that inspired Lesley to create her range of biscuits. Gingerbread was such a popular treat that up until the First World War, gingerbread makers were established in towns & villages throughout East & West Sussex. The rich flavour of this celebrated delicacy is captured in these biscuits. Horsham was renowned for its gingerbread & Horsham museum has an excellent display of wooden moulds used by its town bakers.
Richard Fuller was a resident of Chichester between 1759 & 1842. In the south alley of Chichester Cathedral’s cloisters there are two wall monuments dedicated to Richard & members of his family. His cellar book & his daughter-in-law Maria’s book of recipes were the inspiration for our range of oat-based Chichester biscuits called Sussex Alberts. Within this group we have our Sussex Martlets. A martlet is a mythical bird, like a swallow without feet. It has a strong association with Sussex. These delicious biscuits can be enjoyed on their own or with cheese – they are particularly good with blue cheese. SIMPLE INGREDIENTS, COMPLEX FLAVOURS !

The inspiration for these biscuits was Sussex Pond Pudding, a traditional English Pudding made with suet pastry. A whole lemon, along with some butter & brown sugar, is encased in the pastry & the pudding is then boiled or steamed for several hours. When served, the pudding contains a rich, buttery, lemon sauce. Some diners are brave enough to also consume the cooked, very sharp, whole lemon.

In Maria Fuller’s handwritten cookery book, which she began in the early 1830s, she recorded details of how to make ‘An Albert’. This rich pudding contained ratafia cakes made with bitter almonds, a popular 18th & 19th-century flavouring. They were used in tiny quantities to enhance the taste of a dish. Partnering this with oats & dark chocolate has created an unusual, but delicious biscuit.
Straw bee hives would have been a common sight in the gardens of St Martins, where Richard grew the grapes & gooseberries mentioned in his home made wine records. We replaced the chocolate & almonds in our original Albert recipe with local honey, to create this delicious, sweet biscuit which can be enjoyed on its own or with cheese.
Orange was a popular flavour in the Fuller household. The very first entry in Richard Fuller’s cellar book in 1819 was for orange wine. Oranges, along with chocolate, featured in many of his daughter-in-law Maria’s recipes. We use pure orange extract in these biscuits & hope you enjoy them as much as Richard clearly enjoyed his home-produced wine, much of which he recorded as ‘drunk from the cask’.
