Brewed with great care using only organic malted barley, organic hops, medium-soft water and a bottom-fermenting yeast; matured at low temperatures to bring out its delicate flavour and soft hop-character finish. The cold maturation period allows the bottom-fermenting yeasts to secondary ferment and improve this lager’s flavour, purity and condition. 5% ABV
Brewed with well water (the original well at the Old Brewery, sunk in 1758, is still in use, with the hard well water being drawn from 85 feet underground); best barley malt, yeast and aromatic hops; fermented in ‘stone Yorkshire squares’ to create a full, rounded flavour and after-taste. 5% ABV
Wheat beer has always been known as an elixir or tonic; especially when unfiltered with the brewer’s yeast still in the bottle. Organic Wheat Beer is golden, fruity – the naturally occurring fruit esters from the yeast give prominent citrus and banana flavours – and thirst quenching. 5% ABV

This distinctive type of beer was originally brewed to withstand the abuses of shipping in foul weather to Imperial Russia. It was a favourite of Russian nobility whose taste for the finest food and drink was world famous. A rich flavourful brew; deep chocolate in colour with a roasted barley nose and flavour that is a complexity of malt, hops, alcohol and yeast. Fermented in ‘stone Yorkshire squares’. 7% ABV.
Some of the oak casks at Samuel Smith’s date back more than a century with the individual oak staves being replaced by the Old Brewery coopers over the years. Gradually the casks soak in more & more of the character of the ale fermented in stone Yorkshire squares. Yorkshire Stingo is aged for at least a year, matured in these well-used oak casks in the brewery’s underground cellars deriving fruit, raisin, treacle toffee, Christmas pudding and slight oaky flavours, before being further naturally conditioned in bottle. There it is blended with pure organic cherry, strawberry, raspberry or apricot fruit juices and more organic beer to create fruit beers of considerable strength and flavour. A superior alcohol free ale, dark brown in colour with mahogany highlights and a lingering tight ecru head. The nose is malt forward and the beer is dry and satisfying. The dry malty character is an excellent complement to spicy food. The bottle label is based on an advertising poster used by Samuel Smith’s in the 1950s. Best served at about 55°F (13°C). Delivery

Stone Yorkshire Squares

The brewery still uses stone Yorkshire squares to ferment all its ales and stouts (except Sovereign and Extra Stout) and the same yeast strain has been used since the 1800s.

Whole Dried Hops

Whole dried English hop varieties such as Fuggles and Goldings are used to add bitterness and aroma to Samuel Smith’s traditional ales in the antique boiling coppers.

Oak Casks

Samuel Smith’s uses oak casks for all its naturally conditioned ale. The casks are made and repaired at the Old Brewery by the brewery’s full time coopers.

Cooperage

The Old Brewery has two full-time coopers who make and repair all Samuel Smith’s oak casks. The oak casks are used for handpulled Old Brewery Bitter and for maturing Yorkshire Stingo.
