For the winemaking process, steel vats and concrete tanks are used. Maceration with the skins lasts 15 days depending on the case with a temperature control that is kept below 29 degrees. The first 2 days are carried out two delestages and in some batches the seeds are eliminated to reduce the bitter and herbaceous footprint. In the following days, pumping over is carried out at a frequency of one every 3/4 hours for about 10 minutes. After racking, a soft pressing of max 1.2 atm is carried out. The flower wine thus obtained is stored in steel or cement for subsequent processing. Malolactic fermentation is controlled but not induced.
